This recipe is extra special with vegetables from the garden. Ingredients:
3 medium tomatoes, cubed |
2 celery ribs, chopped |
2 carrots, chopped |
1 small cucumber, chopped |
1/2 cup parsley, chopped |
1/2 cup canned chick-peas, drained and rinsed |
salt, to taste |
black pepper, to taste |
1 lemon, juiced |
1 tablespoon extra virgin olive oil |
Directions:
1. Mix all ingredients together and let sit in refrigerator for 1 hour. |
