The tomatoes become the fruit in this fruit-and-nut cake recipe. Ingredients:
1 cup dark brown sugar |
1/2 cup butter |
2 eggs |
3 cups flour |
2 teaspoons baking powder |
1 teaspoon baking soda |
1 teaspoon nutmeg |
1 teaspoon salt |
2 cups fresh ripe tomatoes, peeled, seeded, and chopped |
1/2 cup nuts, chopped |
1/2 cup dates, chopped |
1/2 cup raisins |
Directions:
1. Cream sugar and butter. 2. Add eggs. 3. Add sifted dry ingredients, mixing well. 4. Stir in tomatoes, nuts, dates, and raisins. 5. Put into prepared 9x13 inch baking pan or Bundt pan. 6. Bake in preheated 350 F oven for 35 minutes, or until cake tests done. 7. Frost with your favorite cream cheese frosting when cool. |
