I admit - I made this and tasted it with a cold. But I could taste it! I also made this with homegrown, heirloom, yellow tomatoes. Other variety I think will work...just make sure they're seasonal. Ingredients:
1 medium onion, chopped |
3 tbsp olive oil |
salt (and seasoning) to taste |
2 cloves garlic, minced |
2 large tomatoes, cored & chopped |
3 pkgs trader joe’s chicken broth concentrate |
2 cups water |
1 tsp dried thyme |
freshly ground black pepper |
Directions:
1. Saute onion in olive oil over medium heat. Season onions and cook until onions start browning/becoming caramelized. Add garlic and stir – don’t let the garlic brown. Add thyme. 2. Add tomatoes and stir. Add chicken broth concentrate and stir to coat tomatoes. Add water and bring to a boil. 3. Remove from heat. Ladle everything, in batches, into a food mill and process. Add pepper and taste. Adjust seasonings as necessary. Serve immediately. It’s also really good cold. |
