This recipe goes with Black Bean-and-Goat Cheese Tortilla Stacks Ingredients:
1/2 cup fresh corn kernels (about 1 ear) |
1 1/4 cups chopped tomato |
1/2 cup chopped fresh cilantro |
1/4 cup chopped red onion |
1/4 cup chopped green onions |
1/4 cup fresh lemon juice |
1 teaspoon hot pepper sauce |
1/2 teaspoon olive oil |
1/4 teaspoon salt |
1/4 teaspoon ground cumin |
Directions:
1. Steam corn, covered, 2 minutes, and cool. Combine corn and remaining ingredients in a large bowl. 2. Note: The salsa can be made a day in advance. Cover and chill. |
