1 pound (about 4 tomatoes) tomatoes, chopped |
1/4 cup red onion, chopped |
1/4 cup seedless cucumber, chopped |
1/4 cup red bell pepper, chopped |
2 cloves garlic, chopped |
2 tablespoons extra-virgin olive oil |
1 tablespoon red wine vinegar |
3/4 teaspoon salt |
1/2 teaspoon cumin |
1/8 teaspoon cayenne pepper |
2 avocados, diced (about 2 cups) |
Directions:
1. Combine all ingredients except avocado in a large bowl. Mash lightly with a potato masher, stir in 1 cup water, cover, and chill for at least 1 hour or up to 6.
