Vibrant green, fresh like spring, with a zap of heat. This is a great salsa to serve in burritos, tostadas, or tacos. Just toss everything in the blender and give it a whirl. You can easily adjust the amount of heat by adding or reducing the amount of chiles. It will last in the fridge all week long. From Laurdes Castro’s Simply Mexican. Ingredients:
1 lb about 9 tomatillo, husks removed, rinsed and quartered |
2 jalapenos or 2 serranos, stemmed and halved |
1 cup fresh cilantro stems, and leaves (lightly packed) |
1 garlic clove |
1/2 onion |
1/2 teaspoon salt |
2 tablespoons water |
Directions:
1. Combine all the ingredients in a blender and pulse a few times before blending the ingredients into a puree. Transfer to a serving bowl if using right away, or transfer to an airtight container and refrigerate if storing. |
