Wanted to make something Greek inspired with the most beautiful baby heirlooms and this is what I came up with. Ingredients:
1/2 container of baby heirloom tomatoes |
1 english cucumber |
1/4-1/2 vidallia onion |
4 roasted red peppers |
some peperoncinni spicy peppers (as much or little as you like) |
1/2 sweet yellow pepper |
4 oz. feta cheese |
salt and pepper |
trader joe's greek feta salad dressing (to taste) |
fresh oregano sprinkled on top |
Directions:
1. Cut bigger tomatoes in half or quaters, leave tiny ones whole. 2. Dice everything else around the same size. 3. Add enough dressing to just wet everything (you want to taste the sweetness of all the veggies and NOT just dressing) 4. I served this salad with garlic and oregano grilled chicken and roasted garlic teeny tiny potatoes. 5. I hope you enjoy this salad as much as my husband and I did!!!! |
