I kind of copied this from a coworker, who I saw eating basically a sandwich, but instead of bread she used a red bell pepper. I was so inspired I came up with this very basic recipe. Feel free to add any ingredients you can think of. I just used what I had in my fridge, but would have loved to add cucumber, sweet onion, or a different color bell pepper (I used green). Also, any vinagrette dressing would probably be delicious. This makes a great lunch, especially if you have a fridge at work. Just prep everything in the morning and stuff the peppers at lunch time. Ingredients:
2 whole green bell peppers |
12 thin slices deli turkey |
6 white mushrooms |
1/2 large tomato |
2 ounces feta cheese |
2 tablespoons raspberry walnut vinaigrette dressing |
Directions:
1. Shred the thin sliced deli turkey, cube the mushrooms, cube the tomato, and crumble the feta cheese all into a mixing bowl. 2. Add the dressing and toss all together. Set aside in fridge. 3. Slice the bell peppers in half and hollow out the seeds. 4. Stuff the bell pepper halves with the mixture. Serve cold. |
