Fresh Strawberry Pie

Couldn't resist these big, juicy, sweet delicious strawberries at the Farmer's Market so I got a bunch of them and made a pie..YUM!!
Ingredients:
6 cups of strawberries (fresh)
1 cup sugar
2 tbsp corn starch
1/4 cup water
1/4 cup fresh lemon juice
1 package of philadelphia cream cheese
lemon zest from medium lemon
****very simple pie crust
2 cups flour
1/2 cup veg oil
1 tbsp sugar
1/4 cup milk
***whipped cream
1/2 cup of heavy whipping cream
3 tbsp sugar
1 tsp salt
Directions:
1. Mix all ingredients for pie crust, will be a little crumbly... wrap in plastic and put it in the fridge for at least 30 mins... but can hold up to a few days.
2. Clean and cut stems off Strawberries
3. Mash strawberries until you have a cup mashed
4. In a saucepan, sugar, cornstarch, water and lemon juice, bring to a boil and boil for about a minute (Make sure to keep stirring the whole time)... add mashed strawberries and stir until thickened, take off heat and set aside until cooled (to room temp)
5. In a small bowl, beat softened cream cheese until creamy and then stir in lemon zest
6. Flour Rolling pin, roll out dough and put in pie pan, crimp edges
7. bake pie crust at 425 for 8 to 10 minutes, or until light golden brown
8. Add cream cheese mixture to pie crust
9. Put all strawberries on top of cream cheese
10. pour sugar mixture over the strawberries
11. refrigerate for about two hours or more until set
12. Make whipped cream and pipe on top..
13. ENJOY!!
