From my collection of handwritten recipes. Ingredients:
4 cups fresh strawberries |
1 baked pie shell |
1 cup sugar |
1/4 teaspoon salt |
3 tablespoons cornstarch |
1 tablespoon lemon juice |
Directions:
1. Wash and hull strawberries. Drain thoroughly. Arrange 2 cups berries (whole) in the bottom of pie shell. Crush the remaining berries in a small saucepan and mix in sugar, salt, and cornstarch. Cook this mixture, stirring constantly until it thickens. Remove from heat and stir in lemon juice. Allow the mixture to cool. Spoon over berries in shell and chill until firm. |
