Fresh Spring Couscous

I have taken great interest in using couscous since I found whole wheat couscous at Trader Joe's. This is a lovely version, made springlike with springtime additions. I want to use this side dish at our family Easter dinner.
Ingredients:
1 (10 ounce) package couscous (regular or whole wheat)
chicken stock
1 1/2 cups frozen sweet peas
3/4 cup crumbled feta cheese
1/3 cup sliced green onion
1/4 cup chopped fresh mint
2 tablespoons grated lemon zest
3/4 teaspoon pepper
salt
Directions:
1. Prepare the couscous according to package directions, using boiling chicken stock instead of water.
2. Cover and let stand 5 minutes. Fluff up couscous with a fork.
3. Add remaining ingredients to couscous, stirring to combine well.
