Sliced Melon with a Fresh Basil Tomato Salad
Ingredients:
sliced fresh melon, no rind or hard part
sliced prosciutto, fat trimmed
basil olive oil
sliced tomatoes, ripe
chiffanade basil
slice cucumber, peeled and cored
red onions, thinly sliced
Directions:
1. Slice melon should cover 2/3 of the plate
2. Lay a piece or 2 of the prosciutto over top of the melon
3. Toss the tomatoes, cucumber, basil and onions in
4. balsamic vinegar.
5. Place the tomato salad on the other 1/3 of the plate
6. Lightly oil the prosciutto with the basil oil.
