A true fresh and wholesome salsa that can easily be altered to suit one's taste. Every year I experiment to come up with different heat factors! There hasn't been a bad batch yet! A very close and dear friend shared this recipe with me a few years back and I have never had to buy the store boughten stuff again. Ingredients:
4 quarts tomatoes, peeled and chopped |
8 green peppers, seeded and chopped |
8 onions, chopped |
5 -10 hot peppers, chopped-seeds okay |
2 -5 cloves garlic, minced |
1/4 cup canning salt |
1 cup white vinegar |
1/4 cup fresh cilantro, chopped (more to taste) |
2 (12 -24 ounce) cans tomato paste |
Directions:
1. Put all ingredients listed above in large pot and heat to a boil. 2. Stirring every couple of minutes to thoroughly mix. 3. Pour into clean canning jars with new lids leaving 1/2 head space. 4. Process 30 minutes in a hot water bath. 5. *Pleasenote*-Tomato paste is not needed if using Roma tomatoes. 6. If using large green peppers and onions from grocery store you can reduce the amounts by half. |
