This is a simple fresh salsa I liek to serve with crisp tortilla chips.
Ingredients:
3 medium ripe tomatoes
1 medium cucumber peeled
2 jalapeneo peppers
1 large red onion
5 cloves garlic
2 tablespoons apple cider vinegar
1 tablespoon extra virgin olive oil
1/4 cup chopped cilantro
salt, black pepper and crushed red pepper to taste
Directions:
1. dice all vegetables
2. toss together with vinegar, oil salt and peppers
3. allow to sit covered, refrigerated for atleast 30 min
4. serve with tortilla chips
