Something fresh to cut through a greasy meat dish, top or side a mexican dish, or to use as a base for bean salads. Great on toasted italian bread as an easy bruschetta or just served with tortilla chips. I prefer my salsas fresh not cooked. Ingredients:
5 ripe tomatoes diced |
1 small red onion small dice |
1 or more jalapeno peppers diced fine |
1/2 tsp ground black pepper |
1/2 tsp salt |
1/2 tsp dry garlic powder or 2 cloves fresh minced |
1/4 cup favourite oil |
1/4-1/2 cup cider vinegar (to taste) or lime juice |
herb options |
fresh minced cilantro 1-2 tsp |
oregano 1/2 tsp dry |
basil 1/2 tsp dry or 2 tsp fresh |
adjust to dish being served |
Directions:
1. Mix all together and let marinate for at least an hour to bring out flavours |
