I developed this recipe using a basic list of ingredients and have since tweaked it to our family's idea of perfect. Keeps for 2 weeks if you can make it last that long without eating it up! We put it on chicken, baked potatoes and dip sweet potato fries in it! Even our 2 year old can't get enough! Of course- it is best with tortilla chips, nice and simple! Ingredients:
1 (14 1/2 ounce) can diced tomatoes |
4 medium fresh tomatoes, cut into smaller pieces |
1/2 cup diced cilantro |
1/2 diced red onion |
1 teaspoon sugar |
1 (2/3 ounce) mccormick's salsa seasoning |
1 teaspoon salt |
1 teaspoon pepper |
1 tablespoon white vinegar |
1 teaspoon cumin (optional) |
1/4 cup diced pickled jalapeno (ole el paso jarred works!) |
Directions:
1. Combine all ingredients in large mixing bowl and stir. 2. Pour mixture into a blender or food processor and mix on medium to high for 30 seconds. 3. Pour into 2-quart container, cover and chill at least 1 hour before serving. 4. Enjoy! |
