From my collection of handwritten recipes. Ingredients:
4 cups fresh raspberries |
1 cup sugar |
3 tablespoons cornstarch |
1 1/2 cups water |
1 baked pie shell |
Directions:
1. Crush 1 cup berries in small saucepan and bring to a boil with 1 1/2 cups water. Lower heat and simmer for 3 minutes. Strain berries through a small mesh strainer or cheesecloth, reserving juice. Return juice to saucepan and add sugar and cornstarch. Boil for 3 minutes. Allow to cool. Fill baked pie shell with 3 cups fresh berries. Pour the juice mixture over the berries and chill. |
