FRESH PINTO BEANS IN OLIVE OIL This recipe came from an estate sale. I obtained it when I purchased the family collection from the Williams Estate in Tyler, Texas in 1994. Ingredients:
1-1/2 pounds shelled pinto beans |
8 tablespoons olive oil |
1/2 pound medium onion diced |
1/2 pound large tomatoes diced |
1/2 red bell pepper cut into small strips |
1/2 green bell pepper cut into small strips |
1 teaspoon salt |
1/4 teaspoon sugar |
3 tablespoons parsley leaves for garnish |
1 quart water |
Directions:
1. Put everything except pinto beans, parsley and water in a large pot then cook 7 minutes. Add pinto beans and water and bring to a boil. 2. Lower heat and simmer covered for 2-1/2 hours then pour in a large bowl. 3. After it is cooled spread parsley leaves on and cover. 4. Serve cold or at room temperature. |
