Fresh Pineapple with Frozen Berry Sauce (Michele Urvater) |

Ingredients:
1 ripe pineapple, peeled, cored and cut into chunks |
1 package (10 ounces each) frozen raspberries and sliced strawberries thawed |
sugar to taste |
2 tablespoons orange juice or orange liqueur |
mint leaves for garnish |
Directions:
1. Puree the thawed fruit, then pass them through a sieve to remove the raspberries seeds. Stir in sugar to taste if need be with orange juice or liqueur 2. Set a clump of chopped pineapple in the middle of each dessert plate; drizzle sauce around the pineapple and garnish with mint leaves. |
