Beautiful, fragrant and tasty loaves made from fresh pineapple. Of course one can add a glaze but this loaf really doesn't need one. Great for breakfast, brunch or buffets served with butter, jam or cream cheese Ingredients:
4 eggs |
1/2 cup melted butter or margarine |
2 cups white sugar ( lt brown sugar is also nice ) |
2 cups fresh pineapple chopped with any juice |
2 teaspoon vanilla extract |
4 cups all-purpose flour |
1 tbs baking powder |
1 tsp baking soda |
1/4 tsp salt |
1/2 cup chopped walnuts or macadamia nuts |
Directions:
1. Preheat oven to 350 degrees 2. Grease and flour 2, 8 x 4 or 9x 5 inch loaf pans ( batter should fill pans 1/2 full ) 3. Beat eggs butter ,sugar and vanilla and beat smooth. 4. In separate bowl combine flour, baking powder, soda, and salt 5. Beat well into creamed mixture ( it may be thick ) 6. Slowly beat in pineapple and nuts. 7. Divide mixture evenly into loaf pans.. 8. Bake in a preheated 350F oven about 45 mins- 1 hour or tested done in center with toothpick 9. If browning too fast, tent with foil 10. Let stand 10-15 minutes in pans 11. Remove from pan. 12. Cool and wrap 13. Yield: 2 loaves 14. Note: if you don't like nuts, omit and replace with things such as flaked coconut, maraschino cherries etc. |
