Ingredients:
2 cups all-purpose flour |
2 teaspoons baking powder |
1 teaspoon salt |
2 large eggs (lightly beaten) |
1 1/2 cups milk |
2 tablespoons vegetable oil |
1 pineapple (cored and cut into 3/4-inch slices, then in quarters.) |
oil, for frying |
Directions:
1. Sift the flour together with the baking powder and salt. 2. Combine the eggs with milk and 2 tablespoons of vegetable oil. 3. Stir into the dry ingredients. 4. Dip pineapple quarters into batter and drop pieces in oil, frying at 375F until golden brown. |
