Pears have long been paired with savory dishes. Try this delicious pairing for dessert tongiht. Serve with a light ruby port from Portugal. Ingredients:
2/3 cup sugar |
1 cup (4 ounces) crumbled blue cheese, divided |
2 tablespoons stick margarine |
1/3 cup skim milk |
2 egg whites |
1 teaspoon vanilla extract |
1 1/3 cups all-purpose flour |
2 teaspoons baking powder |
vegetable cooking spray |
2 cups thinly sliced peeled pear (about 3 medium) |
1/4 cup all-purpose flour |
3 tablespoons sugar |
Directions:
1. Preheat oven to 350°. 2. Combine 2/3 cup sugar, 1/2 cup blue cheese, and margarine in a bowl; beat at high speed of a mixer until smooth. Add milk, egg whites, and vanilla; beat well. 3. Combine 1 1/3 cups flour and baking powder. Add to cheese mixture, stirring just until moistened. Spread batter into a 9-inch square baking pan coated with cooking spray. Arrange pear slices in a single layer in 3 rows on top of batter, pressing pear slices gently into batter. 4. Combine 1/4 cup flour and 3 tablespoons sugar in a bowl; cut in remaining cheese with a pastry blender or 2 knives until mixture resembles coarse meal. Sprinkle over pears. Bake at 350° for 45 minutes or until browned. Serve warm. |
