This is my absolute favorite cobbler recipe- cake like not biscuit! Any fruit may be substituted Ingredients:
6 to 8 fresh firm ripe peaches |
1/2 to 1 cup of sugar to taste ( i use 1 cup ) |
1 stick butter or margarine melted |
batter |
1 cup flour |
1 cup sugar |
1 tsp vanilla or almond flavor |
2 tsp. baking powder |
3/4 cup milk |
1 egg |
Directions:
1. Wash peaches ( do not skin ), dry and cut up into wedges. 2. Melt butter or margarine and pour into a 9 inch square pan. 3. Mix sugar with cut up peaches. 4. Combine dry ingredients and mix in milk and egg into a thick batter. 5. Pour batter over melted butter or margarine. 6. Layer on the peaches, spooning on any juices/sugar. 7. Bake in a 350F oven about 45 minutes or top is golden and set. 8. Cool to warm. 9. Cut into wedges to serve. 10. Serve warm or at room temperature. 11. Garnish if desired, with whipped cream or ice cream. 12. Note: topping is cake like but you could use any good biscuit topping recipe if you prefer. 13. Plus you could easily substitute other fresh fruit such as plums, nectarines, etc. |
