Fresh Peach Salsa & Brie Bruschetta |

I created this recipe for a local farmers market to showcase in season peaches (or nectarines). Extremely easy yet amazing flavor! The salsa alone also can also be used to top grilled shrimp, chicken, pork... or just scoop up with tortilla chips. Ingredients:
2 large peaches (or nectarines), diced |
1-2 red fresno chilies, minced (or jalapeno) |
1-2 green onions, chopped |
2 tablespoons chopped fresh cilantro (or basil) |
1 tablespoon granulated sugar |
fresh lime juice, to taste |
splash of white peach balsamic |
fresh ground black pepper and sea salt, to taste |
any kind of brie/creamy cheese (i prefer st. andre for this!) |
1 baguette, sliced on a bias, brushed with olive oil, grilled or toasted |
Directions:
1. In a medium bowl, all salsa ingredients. Let chill for at least one hour (or overnight). Serve atop cheese on grilled/toasted bread |
