Ingredients:
1 1/2 cups all-purpose flour |
1/4 teaspoon salt |
1/2 cup cold butter, cut into bits |
1/4 cup ice water |
12 peaches, peeled and cut into thick slices |
1 tablespoon fresh lemon juice |
1/2 teaspoon almond extract (or vanilla, in a pinch. the almond is nicer.) |
1/2 cup sugar |
1 teaspoon cinnamon |
1/8 teaspoon grated nutmeg |
2 tablespoons cold butter, cut into bits |
Directions:
1. Make dough: Stir together flour and salt. 2. Cut in butter until mixture resembles coarse meal. 3. Stir in 1/4 cup ice water and stir until dough just forms ball. 4. Let dough stand at room temperature while making filling. 5. Preheat oven to 350F and place rack in middle of oven. 6. Toss peaches with lemon juice and almond extract and transfer to well-buttered 9 inch square baking dish. 7. In a bowl, stir together sugar, cinnamon and nutmeg. 8. Sprinkle evenly over peaches, top with butter. 9. Roll dough out into 9 inch square on lightly-floured surface. 10. Put dough on top of peaches. 11. (if dough is crumbly, arrange over peaches in small sections) Bake for 40-45 minutes. |
