1/4 cup golden raisin, chopped |
1/2 jalapeno, seeded and chopped |
1/2 shallot, finely chopped |
1 tablespoon fresh ginger, chopped |
1 pinch cumin seed (whole or ground) |
1 tablespoon cider vinegar |
1 tablespoon orange juice |
1 tablespoon brown sugar, packed |
2 peaches, peeled and chopped |
Directions:
1. In a small saucepan, combine raisins, jalapeno, shallot, ginger, cumin, vinegar and orange juice. 2. Cook over medium heat for 2-3 minutes, stirring constantly. 3. Add brown sugar and peaches. 4. Cook for 5 minutes, stirring occasionally, until thick and bubbly. 5. Remove from heat and cool. 6. Serving size is 2 T per sandwich. |
