Another great recipe my MIL sent me. Ingredients:
1/2 cup vegetable oil |
1 1/2 cups sugar |
2 eggs |
2 cups all-purpose flour |
1 teaspoon baking soda |
1 teaspoon salt |
1 teaspoon ground cinnamon |
1 1/2 cups mashed fresh peaches |
1/2 cup chopped pecans |
sweetened whipped cream |
Directions:
1. In a mixing bowl, add the oil and sugar; beat well to combine. 2. Add the eggs, one at a time, beating after each addition. 3. In another bowl, add the flour, baking soda, salt, and cinnamon; stir to mix. 4. Gradually add the flour mixture to the creamed mixture, stirring just until blended. 5. Fold in peaches and nuts. 6. Spoon batter into a greased and floured 13x9 inch baking pan. 7. Bake at 325° for 40-45 minutes or until a wooden pick comes out clean. 8. Cut into squares and top with whipped cream. |
