This is simple and quick to fix. Salad on the side and you have dinner. I left the quantities off to allow you to make it your own. Ingredients:
pasta (i like angel hair) |
tomato, chopped (fresh) |
olive, chopped (kalamata or green) |
mozzarella cheese, cubed |
olive oil (just a splash) |
lime juice (lemon will do) |
parsley (fesh best) |
chives (fresh best) |
salt |
pepper |
Directions:
1. Cook your pasta al dente. 2. While it is cooking place the olive oil in a hot pan. Add the tomatoes, olives, lime juice. 3. Drain and add the pasta. Mix well. Add spices and mozzerella. Mix well. 4. Serve and enjoy. |
