Mom came up with this recipe and I love it. We serve it with a salad and a crusty loaf of French bread for sopping the juice. Ingredients:
1 lb butter |
1 1/2 lbs fresh mushrooms, sliced |
2 garlic cloves, minced |
1 cup green onion, chopped |
4 tablespoons lemon juice |
1/4 cup flour |
8 cups chicken broth |
2 teaspoons salt |
1/2 teaspoon pepper |
4 cups half-and-half |
Directions:
1. Melt butter in large stock pot and saute garlic, onion, and mushrooms for about 3 to 5 minutes until mushrooms are golden. 2. Add lemon juice. 3. Mix flour with a small amount of chicken broth to prevent lumps and add along with remaining ingredients to mushroom mixture. Simmer on low heat for 20-25 minutes. 4. Do not boil. |
