Ingredients:
1 pound fresh mozzarella, sliced into 1/4-inch thick slices |
2 ripe red tomatoes, sliced into 1/4-inch thick slices |
2 ripe yellow tomatoes, sliced into 1/4-inch thick slices |
basil vinaigrette, recipe follows |
fresh basil leaves, torn |
salt and freshly ground pepper |
1/2 cup fresh basil leaves |
1/4 cup white wine vinegar |
1 tablespoon honey |
salt and freshly ground pepper |
1/2 cup olive oil |
Directions:
1. Arrange the cheese and tomatoes on a platter and drizzle with the vinaigrette, to taste, and garnish with basil leaves. 2. Basil Vinaigrette: 3. Combine all ingredients and blend until smooth. Adjust seasoning with salt and pepper, to taste. |
