Fresh Mozzarella-Tomato-Basil Salad |

Ingredients:
1/2 pound fresh mozzarella cheese, drained |
2 large red tomatoes, sliced |
2 large yellow tomatoes |
1 cup pear tomatoes, cut in half |
1/2 teaspoon salt |
3 tablespoons extra-virgin olive oil |
freshly ground pepper |
1/2 cup shredded or chopped fresh basil |
garnish: fresh basil sprig |
Directions:
1. Slice cheese in 1/4-inch slices. Alternate tomato and cheese slices on a platter; add pear tomato halves, and sprinkle with salt. Drizzle with olive oil. Cover and chill 4 hours. Just before serving, sprinkle with freshly ground pepper and basil. Top with a sprig of basil. |
