Fresh Mozzarella Tomato And Basil Skewers |

This is a recipe I have made as long as I can remember. I'm not sure where I got the recipe, but everytime I make it, it is a huge hit. Enjoy Ingredients:
12 ounces fresh mozzarella cut into cubes |
1 small basket cherry tomatoes |
12 whole fresh basil leaves |
1/2 teaspoon freshly ground black pepper |
1/2 teaspoon kosher salt |
1 small jar pureed roasted red bell pepper |
12 cup extra virgin olive oil |
Directions:
1. Cut cherry tomatoes in half. 2. Alternately place mozzarella cubes, cherry tomato halves and basil leaves on skewers. 3. Mix together olive oil and pureed roasted red bell pepper then set aside. 4. Grill skewers for a few minutes or until cheese turns golden brown. 5. Brush with olive oil and pepper mix then sprinkle with salt and pepper. |
