These are delicious Mexican wontons. Crispy outside,creamy inside. Ingredients:
3 ears corn,husked |
1 small lime |
1-1/2 c sour cream |
3/4 c fresh cilantro,finely chopped |
2 tsp hot sauce |
kosher salt |
36 square wonton wrappers |
2 plum tomatoes,diced (about 3/4 c) |
1 med. avocado,diced (about 3/4c) |
1/2 c finely diced red onion |
vegetable oil for frying |
Directions:
1. Place corn in steamer basket set over a saucepan of simmering water. Cover and steam 8 mins. 2. Meanwhile ,grate lime zest into small bowl and squeeze in 1 Tbs lime juice. Add the sour cream,cilantrohot sauce and 1/4 tsp salt and mix well;set the dip aside. 3. Remove corn from steamer basket and let cool slightly;then cut kernals off the cobs. Combine with 1.2 tsp salt in a bowl. 4. Line a large baking sheet with paper towels,then arrange the wonton wrapppers on top in single layer. 5. place 1 tsp corn,1/2 tsp tomato,1/2 tsp avocado and 1/4 tsp red onion in center of each wrapper. 6. Heat avout 1-1/2 oil in large pot until it registers 375 on thermometer;bubbles should form around it. 7. Moisten edges of wonton wrappers with water,fold in half diagonally to enclose the filling and form a triangle;press gently to seal. 8. Working in batches,lower wonton in hot oil with tongs and fry 1 min.. flip and fry another 30 seconds or till light golden. Transfer to paper towels to drain. Serve with cilantro like dip |
