Fresh Marinated Vegetable Salad |

I wish I could think of a catchier name, because I think if you try this recipe you will love it! Compared to other recipes I looked at this one is low in fat and sugar! You can use any combination of fresh summer vegetables (equal to about 7 cups). I listed my favorites. I made this in a 7 cup Rubbermaid container. Ingredients:
2 small zucchini |
2 small yellow squash |
1 small vidalia onion |
1/2 small green pepper |
1/2 small red pepper |
1 tomato |
1/2 cucumber |
1/2 cup broccoli floret |
1/2 cup canola oil |
2 tablespoons white vinegar |
1/2 teaspoon dried basil |
1/2 teaspoon dried italian seasoning |
1 tablespoon sugar |
1/2 teaspoon celery salt |
1 dash pepper |
Directions:
1. Mix together marinade ingredients. 2. Chop vegetables in a small dice. I like little squares. 3. Pour over vegetables. 4. Stir until vegetables are well covered. 5. Marinate overnight. Stir or shake a couple of times. |
