Cooking-Light August, 2002 Chill time-2 hours Ingredients:
1 frozen pie crust, baked (9 inches) |
1 cup orange juice |
2 tablespoons cornstarch |
1/4 cup sugar |
1 tablespoon lemon juice |
1 1/2 cups mangoes, finely chopped |
1 cup whipping cream |
1 tablespoon sugar |
1/4 cup macadamia nuts, finely chopped |
Directions:
1. Bake pie crust per package instructions. 2. Pour orange juice into a small saucepan and whisk in cornstarch, until it's dissolved. 3. Add a 1/4 cup sugar and lemon juice mix with cornstarch and orange juice. 4. Cook over medium heat , stirring constantly, until clear and thick. About 5 minutes. 5. Place finely chopped mangoes in pie crust. 6. Pour warm orange juice mixture over mangoes. 7. Cool 30 minutes or until room tempature. 8. Beat whipping cream and remaining 1 tablespoon sugar in a medium bowl, on medium-high speed until firm , but not stiff, peaks form. 9. Spread on top of mango mixture: sprinkle with nuts. 10. Refrigerate at least 2 hours or until thoroughly chilled. |
