From a super market recipe card. No tomato, just lots of fresh flavor. Ingredients:
1 cup jicama, peeled and diced |
1 orange, peeled, sectioned and chopped |
1/4 cup finely chopped red bell pepper |
1 green onion, thinly sliced |
2 teaspoons lime zest |
2 tablespoons lime juice |
2 teaspoons vegetable oil |
1 teaspoon sugar |
Directions:
1. Combine all the ingredients in a medium bowl. 2. Cover and chill for at least 1 hour before serving. |
