Ingredients:
1/4 cup red wine vinegar
1 tablespoon dijon mustard
salt and pepper, to taste
1/2 cup olive oil
1/2 cup loosely packed fresh basil or 1/2 cup fresh dill or 1/2 cup cilantro leaf, finely chopped
Directions:
1. In a medium bowl, whisk together vinegar, Dijon, salt and pepper until mixed.
2. In a steady stream, whisk in oil until blended.
3. Whisk in herbs.
4. Refrigerate up to 1 day.
