Fresh Herb, Chili and Lemon Spaghettini |

This comes from the Food and Drink Magazine. I haven't tried this yet Ingredients:
1 large lemon |
3 tablespoons olive oil |
1/2 cup freshly grated parmesan cheese |
1/4 teaspoon salt |
450 g packages spaghettini |
3 cloves garlic, minced |
1/4 teaspoon hot chili flakes |
1/2 cup chopped mixed fresh herbs (such as basil, chives or parsley) |
salt |
fresh ground black pepper |
Directions:
1. Brin a large sauce pan of salted water to a boil. 2. Finely grate peel from lemon and squeeze out 1/3 cup juice. 3. Place in a bowl, along with 2 tbsp oil, Parmesan cheese and salt. 4. Stir together. 5. Add pasta to boiling water, Cook until al dente, 7 to 9 minutes. 6. Set aside 2 tbsp of pasta cooking water. 7. Drain pasta. 8. When pasta is nearly cooked, heat remaining tablespoon oil in a large deep frying pan on medium low. 9. Add garlic and chili flakes. 10. Cook, stirring occasionally, until garlic is golden, about 2 minutes. 11. Add pasta, pasta water and Parmesan mixture to garlic. 12. Toss gently 1 minute and then add herbs and salt and pepper to taste. 13. Toss to coat and serve with additional Parmesan. |
