Fresh Grilled Grouper and Peaches |

Ingredients:
4 tablespoon(s) (2 ounces) key lime juice |
4 12 ounce(s) boneless, skinless grouper fillets |
1 tablespoon(s) brown sugar |
caribbean jerk seasoning to taste |
1/2 teaspoon(s) cinnamon |
2 tablespoon(s) honey |
5 to 6 tablespoon(s) olive oil, divided use |
4 large ripe peaches |
sea salt to taste |
Directions:
1. Split peaches in half. Remove pits. 2. Mix together lime juice, 2 tablespoons olive oil, brown sugar, honey and cinnamon in a small bowl. Coat each peach half with the mixture. Refrigerate peaches 1 to 2 hours. 3. Wash grouper fillets and pat dry. Coat with the remaining olive oil, using as much as needed to coat the fillets evenly. Season fish with salt and Caribbean jerk seasoning. 4. Preheat grill. When hot, place fillets on grill and cook for about 8 minutes on each side, or just until cooked through. 5. Place peach halves cut side down and grill 4 to 5 minutes. Turn and grill 3 to 4 more minutes. 6. Serve 2 peach halves with each grouper fillet. |
