fresh beans cooked with galric onions and tomatoes. Ingredients:
2 lbs fresh trimmed green beans cut in half |
2 onions peeled and finely chopped |
1 red chilli finely chopped |
6 crushed cloves of garlic |
2 cans good quality crushed tomaotes |
2 tablespoons lemon juice |
5 tablespoons extra virgin oil |
salt and pepper to taste |
Directions:
1. heat 3 table spoons of oil in saucepan,add onion and peppers and fry till soft.add garlic beans keep frying on low heat for 15 minutes. add tomatoes,lemon juice and salt. cover and simmer for about 35 minutes. you can serve warm or cold with freshly made pita bread |
