This Greek salad is my favourite combination of flavours. I think it's a meal in itself. Serve with oven warmed pita bread it you like along with some home made hummus. Ingredients:
1 med. red onion, finely diced |
1-2 c. grape tomatoes |
1 red pepper, diced |
1 c. pitted black olives |
1/2 c. shredded basil |
1/2 lb. crumbled feta |
1/2 c.extra virgin olive oil |
pepper |
Directions:
1. If you can't find grape tomatoes use cherry tomatoes cut in two. I use red pepper because of the extra nutrition in red foods. Take a break and buy yourself pitted black olives. If not, use the royal olives with the purple skin. Use the flat edge of a knife to flatten the olive with your fist, which makes for easy pitting. Don't use feta from a tub-buy something fresh from the deli. I prefer cow feta, but goat feta can be nice too. Some delis wrap your feta in brown paper, but put it in a container and keep it covered with water to keep it fresh if you don't use it right away. Extra virgin olive oil is a must - use a good quality one and the flavour will be amazing. Once you blend the ingredients let the salad stand for a few minutes so the flavours mingle. Yummers! |
