1 serving = 1/2 cup.
Ingredients:
1 tbsp safflower oil
1 tbsp maple syrup
1/4 cup apple juice
1/4 tsp vanilla
2 1/2 cups rolled oats
1/5 cup pecans
1/5 cup sunflower seeds
1/5 cup almonds
1/5 cup cashews
1/5 cup walnuts
1/5 cup pumpkin seeds
1 tbsp sesame seeds
1/8 cup coconut
1/4 cup raisins
1/4 cup currants
1/3 cup dried apricots
Directions:
1. Preheat oven to 350F.
2. In small bowl, mix maple syrup, apple juice, vanilla, oil.
3. Chop nuts.
4. In large bowl, mix oats, nuts and seeds and coconut.
5. Add wet to dry and toss to coat.
6. Spread evenly on baking tray and bake until toasted, stirring often.
7. Let cool.
8. Add dried fruits.
