This is a delicious dish you can adjust or add to, as desired. I don't remember where I originally got it, but it's become a standby for both summer barbecues and for winter meals when fresh salad ingredients are hard to find. Ingredients:
6 cups cabbage, finely shredded |
4 carrots, shredded |
4 green onions, sliced thinly |
1/2 green pepper, sliced thinly |
1 cucumber, chopped (use 2 pickling cucumbers, if available) |
1/2 cup radish, thinly sliced |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
3 tablespoons sugar |
3/4 cup canola oil |
3/4 cup vinegar |
1 tomato, chopped |
Directions:
1. Prepare vegetables and chill well. 2. Add remaining ingredients and mix lightly. 3. Top with tomato (if available). 4. Cooking time is chill time. |
