The cherry coulis is trat and refreshing, an elegant addition to a simple plate of seasonal fruist. With wheat bread and creamy Robiola, this fruit salad becomes a meal. Adapted to Idone's Salad Days 1989 Ingredients:

1/2 cup superfine sugar |
1/4 cup kirsch ( cherry brandy ) |

Directions:
1. Method: 2. 1)In a nonreactive saucepan, combine the cherries, sugar, and Kirsch. Bring to a boil over high heat. Reduce the heat to low and simmer, stirring occasionally, for 10 minutes. 3. 2)Pour the mixture into a food processor or blender and puree until smooth. 4. 3)Strain through a fine sieve and chill. 5. 4)Attractively arrange the fruit over a large platter and pass the coulis separately.
