I found this recipe in the Australian Woman's Day or New Idea. It's a lightly flavoured cake and is not heavy in texture. It looks really good when garnished with the apple slices and cinnamon sugar. Ingredients:
100 g butter, melted |
1/2 cup caster sugar |
1 egg, lightly beaten |
1 1/4 cups self raising flour |
1 large ripe banana, mashed |
2 tablespoons passion fruit pulp |
1/2 cup orange juice |
1 medium apple, thinly sliced |
1/2 teaspoon ground cinnamon |
2 teaspoons caster sugar, extra |
whipped cream, to serve |
fresh mint sprig, to decorate |
Directions:
1. Grease a 20cm round cake tin and line with baking paper. 2. Combine butter, caster sugar and egg in a bowl and beat with a wooden spoon until smooth. 3. Add sifted flour, mashed banana, passionfruit pulp and orange juice. Mix until just combined. 4. Pour the mixture into the prepared tin. 5. Overlap thin apple slices over the top. 6. Sprinkle evenly with combined ground cinnamon and extra caster sugar. 7. Cook in a moderate oven for 50 minutes or until cooked when tested. 8. Turn out onto a wire rack. 9. Serve teacake warm with whipped cream. Decorate with fresh mint sprigs. |
