I love fruit and wanted to make something fruity and elegant for a dessert so I made this one up. It came out beautifuly so I am sharing it with all of you. Ingredients:
crust |
1 1/4 cp flour |
1/2 cup ground or finely chopped almonds |
1tbs sugar |
1/4 tsp salt |
8 tbs cold butter'1 egg yolk |
1/4 cp very cold water |
melted butter for greasing pan |
filling |
1lb cream cheese |
1 pt whipping cream |
2/3 cp powdered sugar |
1 tsp almond extract |
topping |
1 cp granulated sugar |
3 white flesh peaches or necterines sliced |
1/2 cp blue berries |
1 cp cherries pitted |
2 cps strawberries crushed |
1 tbs lemon juice |
2 tbs corn starch |
Directions:
1. Prepare tart pan with removable bottom by greasing well with butter 2. prepare fruit in large bowl and sprinkle sugar over it so it will create it's own juice. 3. place almonds in food processor and pulse til finely ground 4. add flour, sugar and salt 5. pulse three or four times 6. add butter and pulse till well blended 7. add water and egg yolk and pulse till it forms a ball (If it seems a little dry add water a few drops at a time) 8. wrap in plastic wrap and chill for 25 minutes 9. on lightly floured surface roll out dough to about 1/8 inch 10. place in tart pan and press on bottom and up sides. Trim and crimp 11. prick bottom and sides 12. you may want to cover bottom with parchment paper and pie weights or beans to keep it nice and flat. 13. bake in a 450 degree oven about 15 minutes or untill it is golden brown. 14. remove from oven and cool completely 15. in large mixing bowl beat cream cheese till softened 16. add cream and beat till light and fluffy 17. add sugar and extract and beat til well blended 18. scrape into cooled tart shell and smooth top with spatula 19. chill till firm 20. drain juice from fruit 21. measure and if needed add enough orange juice or any juice to make 22. 1 1/2 cp 23. in small sauce pan mix juice, lemon juice and cornstarch. 24. bring to boil and cook stirring constantly til thick and clear 25. cool slightly and stir in fruit 26. spread over top of tart 27. chill thoroughly 28. remove pan sides and serve 29. you can top this with more whipped cream if you like but it really stands by itself. It is absolutely delicious. |
