Fresh Fruit & Spinach Salad |

Just threw this together for lunch today...so easy, flavorful, and filling! (not to mention healthy!) I see it becoming a regular mid-day summer meal for me :) Ingredients:
2 large handfuls fresh baby spinach |
1/2 ripe d'anjou pear, diced |
6 large strawberries, hulled & stems removed, then diced |
1 large handful fresh blueberries |
about 1/4 cup crumbled feta cheese |
6 or 7 almonds, finely chopped |
for the dressing |
3 tbsp balsamic vinegar |
1 tbsp pure honey |
1 dash of each: kosher salt, ground black pepper, dried oregano |
Directions:
1. Whisk dressing ingredients together in a small bowl. 2. Add in your spinach and toppings, toss, & enjoy! :) |
