A Scandinavian recipe to make a refreshing summer soup. I recommend using orange juice with no pulp.
Ingredients:
1 lb bing cherries, pitted or 1 (15 ounce) can dark cherries, drained
1 cup orange juice
1/3 cup sugar
2 cups fresh raspberries
1/8 teaspoon cardamom
1/8 teaspoon salt
1 cup vanilla yogurt
2 cups white grape juice
1 tablespoon lemon juice
Directions:
1. Put the cherries, orange juice, sugar, and raspberries in a blender. Blend until smooth.
2. Pour into a large glass pitcher and add cardamom, salt, yogurt, grape juice, and lemon juice. Stir with a wire whisk until combined well.
3. Serve immediately, or cover and refrigerate for 2-4 hours.
