A Scandinavian recipe to make a refreshing summer soup. I recommend using orange juice with no pulp. Ingredients:
1 lb bing cherries, pitted or 1 (15 ounce) can dark cherries, drained |
1 cup orange juice |
1/3 cup sugar |
2 cups fresh raspberries |
1/8 teaspoon cardamom |
1/8 teaspoon salt |
1 cup vanilla yogurt |
2 cups white grape juice |
1 tablespoon lemon juice |
Directions:
1. Put the cherries, orange juice, sugar, and raspberries in a blender. Blend until smooth. 2. Pour into a large glass pitcher and add cardamom, salt, yogurt, grape juice, and lemon juice. Stir with a wire whisk until combined well. 3. Serve immediately, or cover and refrigerate for 2-4 hours. |
