Lovely refreshing salsa, great with fish or any meat.chill time is cook time. from Company's comming, cooking for diabetics. Diabetic choices = 1 fruit and veggie Ingredients:
1 medium ripe mango |
1 large ripe papaya |
1/3 cup red onion, finely chopped |
1 small red pepper, diced |
1/3 cup lime juice, fresh is best |
3/4 cup english cucumber, with peel,diced |
1 tablespoon fresh cilantro or 1 tablespoon mint leaf, chopped |
2/3 cup unsweetened applesauce |
1 teaspoon sugar |
1/4 teaspoon ground cinnamon |
fresh mint (to garnish) |
Directions:
1. Peel and dice mango and papaya with juice, into medium bowl. 2. Stir in next 8 ingredients. 3. Cover and chill for 1 hour to blend flavours. 4. Garnish with mint leaves if desired. |
