Fresh Fruit Salad With Coconut Cream |

This is a great twist on a fresh summer fruit salad. Ingredients:
2 eggs |
1/4 cup sugar |
3/4 cup coconut milk |
1/2 cup half-and-half |
1/2 teaspoon vanilla |
1 pinch salt |
1/4 cup shredded coconut, toasted |
kiwi, sliced |
banana, sliced |
orange, segmented |
strawberry, sliced |
blueberries |
Directions:
1. Beat eggs and 1/4 cup sugar in heavy saucepan. Beat in coconut milk and half and half. Stir over medium low heat till mixture thickens, about 4 min; do not boil. 2. Strain into small bowl. Mix in vanilla and salt. Cool and chill. 3. Arrange fresh fruit slices of your choice. Spoon cream on top of fruit and sprinkle toasted coconut on cream. |
